    The wrapper is not thick and has a fine texture, with shiitake mushrooms and egg yolk in the filling; the meat filling is somewhat solid, the sauce flavor may be strong, and the egg yolk was found scant on another occasion.

    The skin is chewy, and the shiitake-and-lean-pork filling has a good texture with no stale-oil taste; when eaten cold, the texture may feel lacking, and there was an instance when the skin became hard but returned to a soft, chewy texture after re-steaming.
