The century egg and tofu are cut into pieces, with some mashing; they seem to include Sanxing scallions and other seasonings. The century egg is springy and the tofu soft, with flavor even without extra dipping sauce.
Dumplings
Pork-and-chive filling, thin and springy wrappers, and a firm, juicy filling; the dumplings were seen being made on site.
