  • Vegetable ramen

    The thin ramen noodles are springy—neither too soft nor too firm—and the vegetable-simmered broth is rich yet refreshing; the added chashu is substantial, with a smoky char-grilled aroma and the springiness of pork belly without being greasy.

  • Mapo tofu

    The numbing aroma of ground Sichuan pepper stands out; it is stir-fried with doubanjiang and fermented black beans, is boldly seasoned, and pairs better with white rice.

  • Stir-fried Makino bamboo shoots

    The Makino bamboo shoots are fragrant and pair well with rice; with king oyster mushrooms and minced meat, the dish is lighter on oil and salt and more satisfying.

  • Maqaw pork belly
