Signature Dishes

  • Fuzhou Dry Noodles

The flavor is light, with a relatively simple sauce profile; mix the sauce at the bottom of the bowl thoroughly. Scallions, ginger, garlic, and chili can be adjusted to taste, and the thin noodles tend to be soft.

  • 頭骨肉湯 (Tougu Rou Soup)

The broth is almost unseasoned, and the head-bone meat can be dipped in soy sauce paste; rice wine and shredded ginger can be added to taste, and free soup refills have been recorded.

  • 肝連湯 (Ganlian Soup)

Ganlian soup is available as an option; the ganlian meat comes with a light broth, and scallions, ginger, and other condiments can be adjusted to taste.
