Signature Dishes
Stinky tofu
After the sauce is mixed in, the tofu is firm and soaks up the sauce; its texture tends to be soft rather than crispy, though it can also be crisp on the outside and soft inside. The Chinese herbal flavor may be faint, only a few strips of kimchi are provided, and the sauce has distinctive layers.
Misua
The misua can feature bonito stock, relatively thick or thin noodles, and a relatively light broth; it can also be fairly ordinary. When a lot of vinegar is added, the sourness stands out. The intestine topping can be braised until tender; at times, it has been so scant that it was barely visible or did not match the name.
