Signature Dishes
Poached Chicken
The skin is thin, springy, and tender, while the meat is firm and chewy; the breast has also been described as dry and slightly tough, so texture differs by cut.
Braised Cabbage
The cabbage's sweetness blends with the umami of dried ingredients, and the starch thickening is light; a few drops of vinegar enhance the flavor.
Pork Trotter
Melt-in-the-mouth with a pronounced gelatinous texture; the pork trotter-and-intestine platter has at times been described as not very large.
Pumpkin Rice Vermicelli
The rice vermicelli can be somewhat moist, and the pumpkin portion seems relatively generous; on one occasion it was considered less appealing than the other dishes.
Cuttlefish Ball
The cuttlefish filling is substantial and plentiful; it has also been considered ordinary by some, so trying one may be enough.
