Chrysanthemum Pork Noodles
Chrysanthemum pork refers to pork jowl/cheek meat, tender with a gelatinous texture; the broth carries ginger and pepper, while the noodles range from springy to soft.
Pork Tail
The pork tail resembles a poached preparation and has no offal odor; the pork-tail noodles have tender-soft meat, and the tail can also be ordered as a side dish.
Wonton Soup
The wontons have thin wrappers, a smooth texture, and a meaty aroma; one recorded serving had 5–6 pieces at NT$35, and pepper can be added for more flavor.
Chives and Bean Sprouts
Chives and bean sprouts are served together in a generous portion; when supplies allow, you can customize their ratio.
Dry Noodles
Choose soy sauce or sweet sauce; the soy-sauce version gets aroma from scallion oil, the noodles may be soft, and diners who prefer a firmer bite should take note.
