  • Mushroom pork congee

    The rice texture falls between rice soup and congee; the bone-broth base has a soy-forward flavor without much salt, and white pepper makes it taste just right. It contains two or three handmade pork meatballs. The grains are distinct rather than thick, though the toppings may feel sparse.

  • Roast pork

    Well-seasoned with a crisp exterior; the lean-to-fat balance can be fairly even, though the piece may also feel greasy.

  • Fried shark slices

    Made to order; the fish is tender and richly savory. The coating is not thick, so it is not very greasy, with a texture reminiscent of fried milkfish.

  • Tiger-skin shrimp roll

    Thick and springy, with a texture like a moon shrimp cake; it may also contain a little crunchy water chestnut.
