The skin is lightly charred and crisp, the flesh tender, and the tangy-spicy sambal pairs well; the sauce is also a highlight.
Squid-ink risotto
The squid ink is aromatic and the rice has just the right firmness; it can also run salty and oily, with a small amount of squid.
Fried whole chicken
Crisp skin, very tender chicken, and the dipping sauce is a plus; one chicken can roughly feed three women.
Oysters
Cocktail sauce and Tabasco bring out sweet-salty notes and mute the raw-oyster smell; they can also be very fresh with well-matched sauce, while the plating has previously been considered plain.
