Snow Crab Chilled Noodles

Squab two ways: the legs are marinated with garlic, coated in rice-cracker crumbs, and deep-fried; the breast is smoked and charcoal-grilled, then served with delicate snow salt.
Kamameshi
There has been a firefly squid version with mullet roe and a pronounced crispy rice crust; the blackthroat seaperch version had a crisp, toasted aroma, but the rice was also somewhat soft on one visit.
Crispy-fried Tilefish
