Creative sushi combining Japanese and French techniques, with highlights across the opening courses and sushi progression.

Signature Dishes

  • Italian-style botan shrimp thin slice with dried roe and shrimp-paste ice cream

The botan shrimp is tender and sweet; the rich shrimp-paste ice cream still tastes refreshing, while the roe adds only a light savory-salty accent.

  • Otaru bafun uni gunkan

The uni has good sweetness and no fishy note, with a good rice-to-uni ratio; on this occasion, its low temperature slightly muted the sweetness and texture.

  • Cuttlefish burger

The patty uses the cuttlefish head and fins, paired with tomato, monaka wafer, crispy sushi rice, and fried onion; sweetness and layered crunch stay in balance.

  • Bluefin tuna otoro

After 10 days of aging, the fatty and tuna aromas become more concentrated, with less sweetness than fresh otoro; the texture is free of sinew and remains rich and satisfying.

  • Tamagoyaki

The texture is moist and fine, with a cake-like quality; it can be moist without being soggy, though on one occasion it came across simply as a soft, cake-like bite.
