The botan shrimp is tender and sweet; the rich shrimp-paste ice cream still tastes refreshing, while the roe adds only a light savory-salty accent.
Otaru bafun uni gunkan
The uni has good sweetness and no fishy note, with a good rice-to-uni ratio; on this occasion, its low temperature slightly muted the sweetness and texture.
Cuttlefish burger
The patty uses the cuttlefish head and fins, paired with tomato, monaka wafer, crispy sushi rice, and fried onion; sweetness and layered crunch stay in balance.
Bluefin tuna otoro
After 10 days of aging, the fatty and tuna aromas become more concentrated, with less sweetness than fresh otoro; the texture is free of sinew and remains rich and satisfying.
Tamagoyaki
The texture is moist and fine, with a cake-like quality; it can be moist without being soggy, though on one occasion it came across simply as a soft, cake-like bite.
