Signature Dishes
Lard-mixed dry noodles
Mixed with lard and soy sauce, the noodles are springy and moist with a light aroma; the seasoning may be mild, and the lard aroma can sometimes be faint.
Shumai
Two pieces per serving, with a substantial meat filling and firm texture; black vinegar and chili sauce can be added.
Meat bun
Small in appearance, with a thin, slightly resilient wrapper and a firm, chewy filling; the sweetness has a Tainan-style character.
Wonton soup
Five small wontons in a lightly seasoned soup; it pairs well with dry noodles but is generally less memorable.
