Signature Dishes

  • Cold noodles

The noodles are thin and can be either firm or springy; the sauce is on the thin side, the sesame-sauce aroma is mild, and the garlic flavor stands out. Mustard can be added, and the noodles also have a mildly sweet flavor from a light sprinkling of sugar.

  • Blanched pork liver

At times it has been pink, crisp-tender, and not overly gamey, with soy sauce adding flavor; there have also been instances where it was less fresh than before.

  • Three-in-one miso soup

It combines egg ribbons, pork meatballs, and miso broth; the broth is on the light side with a mild miso flavor, the toppings are sparse, and the overall profile is simple and light.

  • Cold noodles with zhajiang sauce

Zhajiang sauce is added to the cold noodles; the garlic flavor is strong, and chili or mustard can be added to turn up the flavor and heat.

  • Fried egg

It can be ordered soft-cooked and mixed into the cold noodles for a different flavor; a scallion egg is also available.
