    The crust is golden and crisp, with well-marinated meat that has a rich, fatty aroma and a springy bite; the seasoning is on the strong side, so try it plain first, then with garlic soy sauce.

  • Fenqian (粉沯)

    Soft and springy with a slight jelly-like texture; smooth when hot and springy when cold, with plenty of lean-meat pieces. This soft texture may not suit everyone.
