Sujiao Zhajiang Noodles
The zhajiang is at the bottom, so stir it with the house sujiao sauce; the sauce is thick, fragrant, spicy and numbing with a slight sweetness. It is dark but not salty, and not very spicy.

Thin wrappers and a generous filling with good aroma, but the seasoning is sweet-leaning, with relatively little red oil and numbing spice; the filling may have a powdery texture.
Braised Beef Noodles
The broth is smooth and not greasy, with a pronounced star-anise flavor; the noodles are moderately firm to firm. The beef has both tendon and lean meat and can be tender and smooth, but may also be tough and hard to bite.
Hot-and-Sour Noodles
Fragrant, tangy and spicy, served with soup; the sour-spicy intensity may be mild, with a slight sweetness and a full pepper aroma, while the accompanying soup may be hard to make sense of.
Wontons in Soup
