The bun skin is soft and springy with a light sweetness; the braised pork is rich but not greasy, the pickled mustard greens are slightly sour and crisp, the peanut sugar powder is fine-textured and fragrant, and cilantro adds aroma; the meat may also be somewhat springy, and there have also been instances when the braised pork seemed under-seasoned and the bun skin was not springy enough.
Sishen Soup
The soup has a light herbal-medicine flavor and a faint hint of rice wine; the pork intestines are tender and springy, the coix barley retains some graininess, and the overall style is light, with the saltiness also possibly very low.
