Braised pork rice
The braised pork is savory, fragrant, and tender; the fatty meat can melt in the mouth with a sticky, gelatinous texture, but it can also feel oily and slightly heavy. The rice-to-meat ratio affects the texture.
Dry yi mein
The dry noodles are topped with braised pork, fried shallots, and soy sauce paste, with a strong garlic flavor; the thin yi mein stays springy and chewy rather than overly soft. If the sauce paste is not mixed evenly, it may taste too salty.
Assorted soup
A combination of pork liver, pig intestine, and lean pork in a light, refreshing broth; it has also been considered fairly ordinary. There has been an instance of extra soup being provided free of charge when there was not enough.
Lean pork
Fresh pork collar with its connective tissue properly trimmed stays tender whether cooked in soup or simply blanched; it can also be enjoyed with a springy, sweet texture.
Braised tofu
Braised until thoroughly seasoned, it is tender with a pronounced soy sauce flavor; there has been a recorded instance of it selling out before 12:30 p.m.
